There are days I get stuck doing prep like slivering a whole bag of onions, when all I want to do is work the line and cook. That’s the side of kitchen work that most people don’t see and frankly, one of my least favorite tasks. Reinventing yourself and starting from zero is not easy. But it’s part of the process, part of paying dues and earning your stripes. Taking something good out of all of this, my knife work has gotten so much better.
